The general goal of this work was to characterize a large number of proteins with the main interest in detection and localization of non-enzymatic glycation in barley malt. We also carried out the analysis and preliminary quantification of proteins to monitor the changes of protein loading, depending on the barley variety.

Hlavním cílem práce bylo charakterizovat velké množství proteinů s cílem detekovat a lokalizovat zejména neenzymatické glykace ve vzorcích sladu. Rovněž jsme provedli předběžnou kvantifikaci vybraných proteinů s cílem porovnat jejich zastoupení v rámci jednotlivých odrůd ječmene.
