    Resveratrol (3,4,5-trihydroxystilbene) is a naturally occurring phytoalexin produced by some plants classified as spermatophytes in response to biotic and abiotic stress, e.g., pathogenesis, UV radiation, ozone exposure, or mechanical damage. Resveratrol and its natural glycoside derivatives have been found in over 72 plants, including grapevine, peanuts, cranberries, strawberries, teas, mulberries, peanuts, and many of which are used in human nutrition.

    In this chapter, we focus on various approaches to mass spectrometry (MS) useful in the detection of stilbene derivatives, predominantly resveratrol, both in conjunction with chromatography, i.e., the use of GC/MS, HPLC/MS, and the shotgun analysis. In the case of MS, soft ionization techniques such as electrospray ionization, atmospheric pressure chemical ionization, or matrix-assisted laser desorption are often used, especially in combination with high-resolution MS and also single ion monitoring, neutral loss scan, ion scan precursor, etc. The chapter also includes illustrative examples of some applications. It should be noted that the use of MS in metabolomics aids in the discovery of both new stilbenes of biomedical importance and for clarifying the mechanisms of their action in complex matrices, though it is only at the very beginning of its development.
