The concentration of potentially toxic chemicals such as arsenic in rice is closely monitored to ensure food safety. However, the toxicity of arsenic depends on the chemical form or species of the element that is present rather than total concentration. Inorganic arsenic (iAs) species, arsenite (As(III)) and arsenate (As(V)), are known to be carcinogenic and highly toxic, whereas the common organoarsenic species monomethylarsonic acid (MMA) and dimethylarsinic acid (DMA) are less toxic.
