AnnotationSimultaneously with the development of advanced analytical tools giving data on stereochemical distribution of fatty acids in TAGs, different theories explaining experimental results based on random or restricted random fatty acid distribution in the sn-1, sn-2 and sn-3 stereochemical positions have been published. In this paper we propose a 1+2, 3 random scheme where TAGs are calculated as a random combination of specifically synthesized 1,2-diacylglycerols and the remaining fatty acids at sn-3 position, imitating in a simplified manner the enzymatic biosynthesis of vegetable oils. The scheme was validated using complete sets of data on both TAGs composition and stereochemical distribution of fatty acids in TAGs from literature. The calculation procedure was applied to estimate the stereochemical fatty acid distribution in eight vegetable oils on the basis of their TAGs composition determined using reversed-phase.
