Relatively low mutual solubility of water and supercritical CO2 enables that the supercritical fluid extraction (SFE) can be used for the extraction of non-polar and slightly polar compounds from aqueous matrices. In spite of low solubility, the presence of water changes the nonpolar character of supercritical CO2 and the extraction of slightly polar compounds can be expected. Moreover, in the case of alcoholic beverages the solubility of ethanol further modifies the supercritical phase and the extracting power of the supercritical phase is very difficult to estimate. In the continuous mode of the extraction with respect to the static one, the sample volume is not limited and an automated device for overnight work can be constructed. Results from extractions of standard solutions of compounds, usually found in wine, and of real wine are presented.
