V historickém kontextu představuje prvopočátky jejich používání až po současnost. Nechybí ani legislativní opatření dohlížející na zdravotní nezávadnost aditiv a stanovení jejich akceptovatelného denního příjmu. Publikace přináší informace o jednotlivých skupinách potravinářských aditiv, jako jsou antioxidanty, konzervanty, barviva, emulgátory, kypřicí a protispékavé látky, zahušťovadla, látky zvýrazňující chuť a vůni i sladidla včetně jejich úloh v potravinách a jejich zdravotních rizik či prospěšnosti. V brožuře jsou detailně zpracována zvláště sladidla a nechybí ani úplný seznam povolených potravinářských aditiv v ČR. Praktické rady přináší kapitola Jak číst etikety, která na třech typech potravin a jednotlivých etiketách různých výrobků ukáže, jak se dívat na přídatné látky (éčka), které jsou v nich obsažené. Description in English The brochure Food aditives are not the same is focused on food additives. In the historical context, it introduces their use from the outset to the present. There are also legislative measures supervising safety of the food additives and determination of the acceptable daily intake. The publication provides the information about groups of food additives, such as antioxidants, preservatives, dyes, emulsifiers, baking and anti-caking agents, thickeners, flavor enhancers and sweeteners and including their roles in food, their health risks and the benefits. The brochure also contains detailed facts about sweeteners and a complete list of allowed food additives in the Czech Republic is enclosed. The chapter How to read labels brings practical advices on three types of food and the individual labels of various products that will show how to look at the present food additives.
