Description in English The chapter deals with the classical accounts of cabbage which played an important role in the Classical Antiquity as a foodstuff and as a curative plant. The information is divided into three parts: the first (Cabbage for Linguists) looks at Latin expressions for cabbage as dealt with by classical grammarians and etymologists, the second (Cabbage for Gardneners) is dedicated to breeding and kinds of cabbage on the basis of data from agricultural literature, the third on (Cabbage for Consumers) accumulates data concerning the medical and gastronomic uses of cabbages. The number of references to cabbage indicates how the Classical Antiquity greatly esteemed the curative function of this vegetable and the vaste number of instructions on its therapeutic use have been preserved in the form of simple and compound medicaments. In contrast, the limited and simple cooking recipes and the negative evaluation of cabbage dishes, as can be read in literature, testify to the fact that cabbage was primarily intended for inexpensive satiation.
