The aim of this work was to attempt the utilization of a food processing waste, grape pomace, as a source of carbon for microorganisms producing polygalacturonases as industrially important enzymes. Geotrichum candidum CCY 16-1-29 was chosen on the basis of a screening of 83 yeast strains belonging to 15 genera and 24 species.
