Jahrhundert dar und fragt, seit wann man von der „Böhmischen Küche“ als einer definierten, von anderen europäischen Küchen abgegrenzten Größe spricht und welche ihr zugeschriebenen Charakteristika sie von anderen so unterscheidbar machen, dass diese Benennung gerechtfertigt scheint. Dazu zeichnet die Studie die historische Entwicklung des Bildes der Böhmischen Küche nach und versucht zu belegen, wie es sich wann (warum) verändert hat. Daneben beschreibt und analysiert sie, wie das Bild der Böhmischen Küche zur Vermarktung (vor allem im Tourismus) genutzt wird. Als Grundlage der Untersuchung dient nicht nur die Literatur zur Nahrungsforschung, sondern auch Kochbücher, Reiseführer, Reise-Feuilletons und touristische Werbematerialien. Description in English The study deals with the picture of the Czech national cuisine and it analyses it as a construct of the 19th century. It asks since what time the Czech cuisine is seen as a clearly defined, from other European cuisines different cuisine and which characteristics ascribed to it make it so different and easy to distinguish from other cuisines. The study deals with the historic development of the image of Czech cuisine and shows, when, how and why it underwent changes. It also analyses how the images of Czech cuisine are used in the market, first of all in tourism. As sources for analysis literature dealing with research on food and eating culture, cookery books, guidebooks, tourist reports and advertising are used.
