Annotation
Tartar sauces are typical multiphase emulsion systems of the oil-in-water type. Two recipes were tested, each series consisting of 10 samples, measured at 15, 20 a 25C. the sensory profile and sensory acceptabilitites were tested under standard conditions as given by international standards
