    The aim of this work was to assess the impact of selected hop products, their concentration, pH and surface tension on the foam structure and stability in matrices of model solution, model beer and real commercial beer. Each sample was used to create foam in a defined way and the foam was analyzed by image analysis and by the NIBEM-T method (Haffmans). The analyses led to structural and stability characteristics of foams.
