The gluten content in various glucose syrups was determined by several ELISA methods in this study. MALDI-TOF mass spectrometry and SDS-PAGE were carried out as a complementary technique to ELISA methods.
Tato práce se zabývá stanovením glutenu v různých glukózových sirupech pomocí několika ELISA technik. MALDI-TOF hmotnostní spektrometrie a SDS-PAGE byly použity jako doplňkové techniky pro analýzu glutenu v glukózových sirupech.
