    l以杨梅叶精油提取后的料渣为原料,对料渣的水溶性提取物进行了抗氧化分析,并将水溶性提取物经石油醚、二氯甲烷、乙酸乙酯和正丁醇分级萃取,并测定了其抗菌能力,在此基础上将抑菌效果明显的萃取层添加于肉糜进行防腐试验.结果表明,杨梅叶水溶性提取物在o.1- 5mg/mL的浓度范围内对DPPH自由基和羟基自由基的清除能力均随着浓度升高而提高,且达到80%以上,具有较强的自由基清除能力.通过抑菌实验发现乙酸乙酯层和正丁醇层萃取液具有较强的抗菌性和较宽的抗菌谱,通过对肉糜的防腐添加实验发现乙酸乙酯层萃取液优于同浓度的山梨酸钾防腐效果,正丁醇层萃取液与同浓度的山梨酸钾防腐作用无显著差异.
