Jerusalem artichoke is a biological material whose amount of inulin in the tubers is affected by many various factors (bonita of soil, climatic conditions during vegetation, fertilization and chemical protection of plants, etc), and due to this aspect, the reproducibility of the results is not easy, however, it can be concluded that the study confirmed the feasibility of all production steps of refining the pure inuline production from Jerusalem artichoke.
