In this work, we focused on characterization of cereal allergens. As the cereal samples, barley (Hordeum vulgare) and wheat (Triticum sp.) and two types of corresponding final cereal food stuffs (barley malt and wheat couscous) were selected. Low molecular weight allergens were subjected tol quantitative analysis using iTRAQ method.
