An experimental connection, suitable for measuring of bioimpednace in beef samples, has been developed to determine the intramuscular fat content as well as other senzoric and quality parameters of beef. )03). The achieved results reveal that after thorough verification and calibration performed with use of multidimensional evaluation a similar experimental connection can be employed to carry out a routine analysis of quality parameters of meat directly at slaughterhouses as a part of a technological line.
