Alkaline digestive α-amylases were investigated in the flour moth Ephestia kuehniella, an important stored-product pest. The cDNA sequence was determined, and a homology model was built in order to analyze structural features responsible for adaptation to alkaline pH. Interaction of these enzymes with alpha-amylase inhibitors of plant origin was characterized in vitro and in vivo.
