Alcoholysis of blackcurrant oil mediated by .I.Pseudomonas fluorescens./I. lipase performed at 30řC in ethanol (96%, v/v) used both as a solvent and as a reactant. After 16h, 95% of triacylglycerols present in the oil was converted into a mixture consisting of fatty acid ethyl esters (52%), free fatty acids, monoacylglycerols and diacylglycerols.
